To recreate the sweet and spicy kick of traditional Memphis barbecue in sausage form, we use barbecue spices, scallion and garlic, vinegar, and brown sugar. Our pigs enjoy a healthy lifestyle outside in the pasture and woods, resulting in meat with an exceptional flavor and sausage that can’t be beat. These 1/3 lb links have a natural casing so we advise starting them over low heat before searing, to reduce the risk of bursting.
