These patties were born ready (for the skillet). A few years back we purchased a processing facility that unbeknownst to us, had a very old sausage recipe inside, procured from a traveling spice salesman. Today, we’re the only butchers to still have the rights to this special recipe, sharing it only with the family-owned spice company out of Franklin, Tennessee—where we still get all our spices from. This is a classic breakfast sausage that is seasoned with sage, ginger, red pepper, black pepper, and brown sugar. Since our pigs have the freedom and opportunity to use their muscles in the woods, the meat develops a deep, incredible taste.
